Adventures in Skegness

Good Morning! I'm writing at work on Monday afternoon at 3, enjoying a bowl of homemade Thai coconut soup. And as Adam Driver would say, it is indeed "good soup". I've had a pretty full on weekend, traveling up to Skegness and back for my dad's birthday. I ate alot of good food. Probably too much :)
I want this blog to be both about my own dishes and creations along with things I've tasted along the way and this trip is an excellent way to start.
My Dad's partner, Ruth, is an excellent cook. We both share very similar methods of cooking, such as glancing at a few recipes and then creating that dish in our own way. So I'm always pretty excited for the food whenever I visit. On Friday we had a beautiful caprese salad, featuring some homemade ciabatta. Considering I made homemade pizza on Thursday and ate just over half a ball of mozzarella, I too was surprised at my excitement to consume more. The main was again, way too good for home cooking. She made Ottolenghi's eggplant dumplings. I'll link the recipe below but I can guarantee that what we had was different in one way or another. I think the farm fresh eggs from their chickens will always improve every dish made by 1000%. I took 3 boxes home as they taste so much better than any store brought egg. Back to the dumplings. The texture of these big bad balls was delightful, the flavour wasn't too aggressive and the sauce complemented it beautifully. I ate way too much but was then presented with a hot, chocolatey fondant which was gooey and so very rich. A dollop of double cream on top and I was in heaven. I'm not a desert person. And I shouldn't have eaten it as I was close to bursting. But how could I let it go to waste.
There was another chocolate themed delight that I was yet to experience on this little weekend trip. Beer. But not just any beer. Chocolate beer.
Chocolate beer I hear you cry? Yes children, chocolate beer.
Batemans Chocolate Mocha Beer. I was graced by the invention of peach beer (Jubel) but 3 months ago and my mind, has again, been blow. The coffee beans and choclate blend really well with the beer and I think it would be perfect on a cold evening by a fire. It has a cozy feel to it which I really like seeing as that part of the year is drawing to a close.
I need to step it up when I order at my local pub as it seems I could be looking straight past a new favourite beer or an intresting flavour. I need to start branching out with my beer choices!
The food this weekend was a highlight of the trip for another reason. My dad's birthday present. When I was a kid I used to make my dad a cheesecake most years. Since I started my cooking journey, I realised I haven't made one since I was about 10. So it was time. I ventured to Waitrose (only the best for Dad :) ) selected my ingredients and consulted the desert queen Jane's patisserie for the ultimate birthday throw back.
Cheesecake's are pretty simple but there are 2 things I knew I had to include. Lemon curd, homemade of course. And ginger biscuits. No cheesecake or any biscuit base would be Dad approved if it was anything but ginger.
I didn't manage to take a photo of my creation, but it survived the train to Skegness and my Dad seemed happy to receive it. He even asked if his present was a baked good.

I left Skegness with over a dozen eggs, a full stomach and a happy heart. It was great to see my family, and meet the newest member! Bronte the Emu was born on the 13th and she's adorable! I got to hold her just before I got my train. Hopefully her 2 siblings will join her soon!
This weekend has given me lots of inspiration for both cooking and writing. I'm hoping that the more I write, the better my blog post's will go. I am very new to all this but it is super exciting and I can't wait to share my journey with you and look back on my progress!

Also, today is my dad's birthday! Happy birthday Dad!
