Hear me out okay. I know that it's till somewhat freezing and it is not AT ALL salad season but the cravings came and I had to comply. Salad is one of my favourite meals as it's so changeable and I love how every time I make one it's diffrent. But these first few salads of the year have made me venture into the unknown. Dressings.
I've never been a fan of salad dressings and when I was a kid, the oli/ vingar mix did not apeal to me, but on this cold tuesday when I was cutting my lettce and aranging my toppings I noticed how sad he looked. Nothing cooked, no spiced, fried or oven baked parcel to liven up this humble salad. I decided that it was only fair to him that I gather my ingredients and dress him up. I had so much fun making this dressing that i now make up a bottle at the start of the week to add to things, just in case. It brightend up this salad so beautifly and as I sat down to enjoy it on my day off I realised how much I had missed out on. Years and YEARS of no dressing's! Naked salads! Am I a salad loving fraud? If this is the case I make it my duty to explore and be adventuors with my salad dressings because they are just as important as the fillings!
Maple Mustard and Chive Dressing
2 tbsp oil
1 tsp lemon juice
1tsp Maple syrup
3/4 tsp grainy mustard
1 tbsp chopped fresh chives
Mix well, and drizzle over salads :)

Looks yummy!!
