Sweet 'Green' Cake

Getting baked… goods is something that I don’t do enough. When I was working in the North Laines there was a bakery opposite my work called Cloud 9. In the mornings I would trade breakfast for cupcakes and brownies and sometimes a juice for a milkshake or two :) I became good friends with one of the girls who worked there who, coincidentally, also quit to start her own business. Along with Cloud 9, I’d do breakfast deliveries to the fudge shop, oddballs, Lucy & Yak and down to earth, receiving various treats from some in return.
I do miss my little breakfast rounds, it was a huge help in making friends when I moved to brighton. Or Maybe I was just in it for the free cake… I guess we will never know!
But since leaving my life has been lacking a little sweetness.
Although I spend a lot of time whipping it up in my kitchen, baking is usually the last thing on my to do list. As an improve queen I struggle with baking as my powers of chucking things in and hoping for the best usually end in a tragic mess. For example, I remade my birthday cake last year 3 times until My housemate came home and rescued me with some of the finest cakes from Waitrose. But when it works, It is magical!
Having said that, I am never discouraged from trying again, be it my determination, or the fact I forget how terrible the outcomes have been. So with all the time and none of the money I thought why not give it ago, and film it along the way.
I made a Courgette loaf cake following a tweaked recipe I worked with years ago. Depending on the tray used, you can tweak the cooking time and choose if you want a brownie or a cake. Plus, it's vegan and has a whole friggn vegetable in it which isn't even noticeable. What more could you want :)

After going to the shops and buying everything I thought I needed I began setting up my workspace and getting on with the baking. I quickly realised that I was out of some of the things I needed so my reign of improv queen was called into action whether I liked it or not for there was a video at stake. I ran out of baking soda and sugar, two pretty important ingredients when baking I believe. So there was plenty of excitement when it came out pretty dam good!
Baking this restored my faith in my own ability to make sweet treats and has given me courage ( which is potentially a bad thing) to adapt baking recipes that I follow.
Recipe for Courgette Chocolate Masterpiece
Plain Flour 2 ½ Cup ( half and half plain and self raising)
Sugar 1 ½ Cup
Coco Powder ½ Cup
Baking Soda 1 ½ tsp ( 2 ½ tsp baking powder)
Oil ½ Cup
Water ¼ Cup
Vanilla Essence 2 tsp
1 Large Courgette
Chocolate Chunks ½ Cup

I’m trying to post the blog around the same time as I post videos as it gives me more inspiration to write :)
